Steps in Tutorial:

    Step 1

    Place Clever onto gram scale, and line with Chemex paper filter.

    Step 2

    Tare the scale.

    Weigh 22 grams of coffee.

    Grind coffee on coarse drip grinder setting.  (Baratza setting 20-22)

    Rinse the Chemex paper filter to eliminate the paper taste.

    Drain rinse water from the Clever.

    Pour the freshly ground coffee into the Clever lined with the rinsed filter.

    Place the Clever on the scale.  Tare the scale.

    Step 9

    Pour 300 grams of spring or filtered water, just off the boil, onto the ground coffee.  Be sure to evenly saturate the coffee grounds.

    Step 10

    Set your timer for 3 minutes.

    After 30 seconds, stir the coffee to achieve a sweet cup. Now put the Clever's lid on the steeping coffee to keep it hot.

    Step 12

    After three minutes, place the Clever on top of your cup. The mechanism is such that the coffee will begin to pour into the cup when the plunger is depressed.  Be ready for hot coffee to flow from the bottom of the Clever Dripper.  To stop the flow of brewed coffee, pick up the Clever.  Enjoy.
