Mrs. Berlin Alvarado has crafted a creamy coffee with flavors of chocolate, fig and blackberry sweetness. We use this coffee for True North's nitro cold brew and every morning in our home kitchen Chemex.

The cherries are de-pulped every afternoon at the wet mill. Next, the parchment is put into fermentation tanks where it is dry fermented for 12 hours, then rinsed 3 times. Following this, the parchment is placed on raised beds where defective beans are removed by hand. After sorting the parchment is put inside the parabolic solar dryer for between 15-22 days. This preparation is commonly known as "zero defects".
