Las Palomas is one of many mountain peaks around the San Pedro Necta area of the Huehuetenango region. The coffees making up this blend comes from the collective production of nine small producers located in and around Las Palomas, starting at an elevation of 1700 MASL and ending at about 1980 MASL.

The higher altitude, affords a later harvest season, starting in early March. There are two rounds of handpicking. Once picked, the coffee is sorted by the members of the family, who also oversee their own wet mill processing and drying on their own patios.
